Vitamin D (which is actually a hormone, not a vitamin), has been shown to be crucial to activating our immune defences.
You don’t need much – apparently, just 10 to 15 minutes a day with more than 50% of your skin exposed is enough to keep your Vitamin D levels normal AND give you a nice healthy sun-kissed glow! 😉
But all this hot weather tempts us to creamy, icy treats!
Regular ice-cream is packed with empty calories, unhealthy fats, and sugars, all of which are cornerstones of chronic diseases like diabetes, coronary heart disease, and cancer.

This adapted recipe from one of my favourite sites https://minimalistbaker.com/, is actually SO healthy, that you could totally eat it for breakfast or add a few scoops on top of your cereal or overnight oats! We’re not kidding!
We’ve tried lots of these ‘vegan’ ice-creams in the past because my partner Jose has a serious sweet tooth, but none have been good enough to motivate us to make a second batch.
Turns out the method, more than the ingredients, is the key to making it as decadent and ‘ice-creamy’ as the original.
Of course, we’ve added a healthy serving of IMMUNENCE into the recipe, which added a lovely nutty undertone and helped make the ice-cream taste creamier!
And even more good news, 4 (tablespoon) scoops of this creamy delight is only around 40 calories!
Keep a tub of this little slice of heaven in your freezer for the summer months and you’ll never have to feel guilty about eating ice-cream again!
